Around 1850, a carpenter named Jules Romain Alexandre Cloud purchased a dilapidated cider press in the village of Saint-Siméon. He then proceeded to construct a cement spillway with vanes and a short canal to bring water to the wheel of his sawmill, which he cleverly positioned perpendicular to the cider press. The structure of the sawmill is quite unique, featuring twisted, vaulted, and knotty beams that he wouldn't have used for his regular customers. It wasn't until later that he added his own house to the property.In 1955, an antique dealer and fresco teacher became the owner of the "Moulin de Mizande" property. This new owner took on the task of restoring the circular trough, wooden mechanism, millstone of the crusher, and the large gear with its box-wood teeth. Additionally, he adorned the place with intricately carved wooden panels, alcoves, fireplaces, and staircases from the seventeenth century. The name "Moulin de Mizande" is derived from the spring that can be found in the field, not far from the one created by Sanctus Simeon the Stylite when he visited Gaul in the fourth century.
In early April, the surroundings of the Moulin de Mizande are covered in a rare form of anemone called ranunculaides, which has disappeared from the rest of the Ile de France. This unique site has been catalogued by the Museum National d'Histoire Naturelle for its plant life.
The current owner has made various improvements to the property while still maintaining its original charm. These include the construction of a parking lot, garage, and porch, as well as the restoration of the wheel and vanes, enlargement of the stables, and renovation of the house's attics. All of these enhancements have been carried out with utmost respect for the surrounding environment's authentic character.

1. Take the A4 East Highway towards Nancy Metz.
2. Take exit 13 towards Provins and Villeneuve le Comte.
3. At all roundabouts, continue following signs for Provins.
4. At the Pézarche roundabout, take the third right onto D402 towards Coulommiers.
5. Continue straight through Mauperthuis.
6. At the next roundabout, take the first right towards Coulommiers.
7. At the following roundabout, take the second right onto D934 towards La Ferté Gaucher, Vitry le François, and Sézanne.
8. Proceed straight through the traffic light at Chailly en Brie.
9. After traveling approximately 5 kilometers (3 miles), turn left towards Saint Siméon.
10. Follow the road-signs for "Chambres dhôtes" to enter the village.
11. Once in the village, turn left towards Charcot (signposted "Chambres dhôtes").
12. After 200 meters, turn left immediately after crossing the little bridge over the river (signposted "Chambres dhôtes").
13. Park in the parking lot in front of the first garage on the left.
14. Look for the doorbell on the garage wall near the green wood.
